SPUMANTE METODO CLASSICO
Extra Brut

Variety: 40% Nebbiolo and 60% Pinot Noir
Elevation: 300/350 m. asl.
Plant density: 5400 plants/ha.
Soil: Marly, white tuffaceous.
Vinification: The black berried grapes are vinified in white with a soft pressing and selecting the first fraction of drained wine which has no colouration. Once fermentation is complete, 20% is aged in 500 liter tonneaux and the remainder in stainless steel tanks.
Second fermentation: After 6 months, blending and bottling follows for refermentation in the bottle. The peculiarity of this wine is that sulphites are not added throughout the vinification phase. After a stay on the lees for 84 months, manual remuage is carried out, disgorgement and the addition of the "liqueur" (3 g/l of sugar and a small dosage of sulphites to protect the wine in this delicate phase).
Residual sugars: 3g/l
